Inspiration for a Renewed Chilean Cuisine

That's the best kept secret ever

He studied Gastronomy at the INACAP Institute, starting on 1988. During the next year he joined the gastronomic team of Hotel Plaza San Francisco. Manríquez also worked with “Les Toques Blanches” group, directly with his president, Al Bachmann, learning Asian cuisine.

Also, he had the opportunity to learn many gastronomic secrets from Eric Ripert, executive Chef from “Le Bernardin” restaurant, at New York City and with Jean Paul Bordeax, executive chef from the “Le Borgogñe” restaurant, at Buenos Aires, Argentina.

Axel Manríquez has an important experience on the main gastronomic fairs around the world. From several that can be mentioned, we highlight the England tour, organized by PROCHILE on 1996, at the luxury’s Intercontinental London Hotel.

Achiga (Chilean’s Gastronomy National Association) has given Manríquez its Silver and Gold awards, for leading the most important contest in Chile.

For the last 3 years, he has participated in gastronomic events at Milan and Rome, Italy, which has gained him a deep knowledge on Italian cuisine.

2007: Axel and friends, touring with Michelle Bachelet in Japan, on gastronomic weeks.

Since 2008, Axel Manriquez is the brand new executive chef of the Hotel Plaza San Francisco, leading one of the most distinguished cuisine teams in Chile.
